You monitor the carbonation levels of your cider as the yeast consumes the available sugar. The cider is then bottled before the fermentation process is finished. By timing it right, there will still be enough sugar and yeast captured in the bottle to create carbonation. This is a more controlled option as you can precisely measure the amount of sugar available to the yeast after bottling.
This process involves a longer fermentation period, where you wait until the yeast has consumed all of the natural sugars available in the cider juice. This process usually takes about 4 weeks if the temperature is close to 74 degree F. Just before bottling, an additional source of sugar is added.

I've got some that I want to keep pretty dry, so I didn't add a lot of sugar, and some that I wanted to be pretty sweet that have more sugar. It's been 5 days, and I checked my plastic sample bottles and there's no fizz. I thought maybe the sample bottles were leaking the carbonation, so I cracked open one of the glass bottles to check.
Should I put a single drop of activated yeast yeast mixed with warm water into each bottle to aid the process? When should I be scared of bottle bombs? Temps are around 65 to 75 in the room, cider was extremely clear and extremely dry when I bottled before sweetening.
